Cute Little Lemon Biscuits

When I saw this recipe, I couldn’t resist giving it a go for my ‘contra’ deal I’ve got going in the office in exchange for farm free range eggs.  They also fitted the bill in regards to size as these are to feed young children who of course can’t work their way through a large biscuit.  I made them into little backward “s” shapes, but I think you could experiment a little with that.

Lemon Biscuits


100gm softened butter
125gm caster sugar
Zest from one Lemon
4 T Lemon juice
1 large egg, lightly beaten
350gm plain flour
1 t baking powder
1 T milk
Icing Sugar for dusting


Preheat oven to 170oC/375oF.  Line 2 large baking trays with baking paper.  Beat the butter, sugar and lemon rind together until light and fluffy.  Alternatively add the egg and lemon juice to the mixture, beating well between each addition.  Sift in the flour and baking powder and mix well.  Add the milk to form a smooth dough.

Lemon Biscuits 2Turn the dough onto a flour work surface and divide into 40 pieces.  Roll each piece into a small sausage (about 10cm/4” long), then form into a S-shape and place on the baking trays.  Bake for 15-20 minutes, or until starting to turn golden brown on the edges.  Leave to cool on a wire rack, then dust with sifted icing sugar.
